63% of us believe breakfast is the most important meal of the day and they’re right. It revives our energy levels after a night’s sleep and sets us up for the day ahead. But, despite that one in four of us skip breakfast at some time during the week.

Given we waste nearly £2 billion pounds worth of good food and drink which could have been eaten for breakfast we really should start the day loving our foods (and saving money too!!)

Here are some fantastic recipe ideas which are perfect for breakfast (or any time of the day to be honest!)

Why not try…

  • Toast’s always quick and easy in the morning. If you freeze sliced bread you can toast it straight from the freezer. Why not add some interesting toppings. Bananas and honey, leftover baked beans with a splash of chilli sauce, cream cheese and the last spoonful of jam, a sliced fresh tomato or leftover tinned tomatoes from yesterday’s evening meal.   • If you enjoy cereal try adding something different. Nuts and seeds make a healthy topping or use any flavour yoghurt instead of milk. Slice the last apple on top of your muesli or add a squeeze of orange for a zesty porridge treat. Add the last blueberries, strawberries or honey to any cereal, hot or cold.
  • Use up yoghurt and fruit in a healthy tasty smoothie - A great way to use up soft fruit and bananas approaching their end!!
  • French Toast with honey
  • The microwave is a great way to save time at breakfast. Use it to make quick porridge or re-heat baked beans. Why not add some fruit to your porridge to liven it up. Omlette
  • Use up eggs and make pancakes or omelette - Make pancakes or try an omelette with ingredients you’ve already got in the fridge – cheese, peppers, mushrooms, whatever’s there and needs using up.
  • Make hash browns - This is a great recipe for using up leftover roast or boiled potatoes. You can make it for breakfast to accompany a fry up or make into a lunch or supper recipe by adding chopped bacon or ham. Or how about adding strips of smoked salmon or flakes of smoked trout and serving with salad?
